  • 6 short beef ribs
  • 1 packet Bart’s Smokey Chipotle spice rub
  • 0.5L bottle of Guinness
  • 4 to 6 onions

  1. Slice the onions and spread them at the bottom of a large roasting tin.
  2. Cover the ribs in the Smokey Chipotle rub and lay on top of the onions.
  3. Add a whole bottle of Guinness to the ribs.
  4. Cover the tin with a double layer of tin foil and slow cook in the oven at 160°C for four hours. Turn over the ribs every hour or so and top up liquid with water.
  5. When ready, skim off the fat and make gravy from the cooking liquid. Serve with roast or mashed potatoes.
