Onion rings in beer batter

Inspired by the excellent onion rings in the Draft House, East Dulwich, I set out to make my own. The result was fantastic.
Onion rings in beer batter

Ingredients
- 3 medium-large onions
- 330 ml bottle of lager (I used St Mungo)
- 1 cup of plain flour
- salt and pepper
- 1 tsp smoked paprika
- 1 litre rapeseed oil
Instructions
- Put equal amounts of sifted plain flour and lager beer in a bowl. I used one mug of each and produced enough batter to coat 3 onions. Whisk the flour and lager to combine, cover with a large plate and leave for an hour or so.
- When you're ready to cook, season the batter with plenty of salt and pepper. You can be creative and add your favourite herbs or garlic.
- Pour the oil into a large pan and heat up gently until very hot.
- In the meantime, peel 3 medium-large onions and cut into 1cm rings. Separate the layers with your fingers.
- Sieve a little flour into a bowl, add 1tsp of smoked paprika and mix well. Coat the onion rings in the flour mixture.
- When the oil is very hot, coat a few onion rings in the beer batter and fry until golden brown. You will need to work in batches.
- Drain on paper towels and serve with barbecue sauce, ketchup or tzatziki.
