Slow Cooked Short Beef Ribs

Ingredients
- 6 short beef ribs
- 6 short beef ribs
- 1 packet Bart's Smokey Chipotle spice rub
- 1 packet Bart's Smokey Chipotle spice rub
- 0.5L bottle of Guinness
- 0.5L bottle of Guinness
- 4 to 6 onions
Instructions
- Slice the onions and spread them at the bottom of a large roasting tin.
- Cover the ribs in the Smokey Chipotle rub and lay on top of the onions.
- Add a whole bottle of Guinness to the ribs.
- Cover the tin with a double layer of tin foil and slow cook in the oven at 160°C for four hours. Turn over the ribs every hour or so and top up liquid with water.
- When ready, skim off the fat and make gravy from the cooking liquid. Serve with roast or mashed potatoes.
